How do you use gpedit and only restrict a user at a time?

I now have gpedit and I was wondering how to actually use it, I was going to create a guest account that has many restrictions such as hiding the control panel add or remove etc... How do I actually use gpeditor and how do I only set restrictions to one user at a time eg. Guest account only
